Day Thirty Two of My Health Journey

I have lost my train of thought regarding keeping everything in order. I did not post Tues-day, because my husband took the camera with him. Yesterday the camera was dead, so it wouldn't transfer what photos I have on to the computer. I had to charge it yesterday, so let me see what all I remember.

Tues-day morning I had tea. I had a mixture of licorice root, elderberry and wild cherry bark tea. All of these ingredients are good for asthma. I use honey to sweeten my tea. This was the last of my honey, so I haven't drank anymore tea since then.

Photobucket

My husband drank Linden tea with sugar. Since he still has sugar he is still drinking tea, though he finished the Linden tea bags.

Photobucket

We each had a cup of tea with a banana for breakfast Tues-day.

Photobucket

As I said, my husband left after that, taking the camera with him, so I did not get to photograph what I ate for lunch, but I believe it was a spring salad (greens only) and a Gala apple. That night we had leftover soup.

Photobucket

Wednes-day morning we had juice. It contained celery, bok choy, an apple, carrots, and some peppers and cilantro I had left, some kale and a piece of garlic.

Photobucket

Here is the finished product. It only made one glass for each of us, as opposed to the usual 2 1/2 glasses that we normally drink.

Photobucket

Later in the day I had a spring salad (all greens)...

Photobucket

while my husband had a bowl of cooked oatmeal, which I forgot to photograph.

For supper Wednes-day night we had a homemade Philly steak sandwich, and here is where my camera went dead and I didn't get to photograph it. We had the same tonight (Thurs-day) for supper, and I forgot to photograph it, as well. I just haven't felt well these past couple of days! Ladies will understand what I am talking about.

Last night after I got the camera charged up I made us an oatmeal treat. I won't eat cooked oatmeal. I will only eat it crunchy as in a cookie or something like apple crisp. My husband was craving something sweet, and I can't deny I was too. We had not had a sweet since July 4 weekend, when I made the deep dish apple pie, so I figured we deserved a little treat. We will finish that off tonight.

Photobucket

I don't really have a recipe for it. I just added about 6 ounces of butter, a cup of brown sugar and a cup of oatmeal, mixed them together and placed them in a 375 degree oven, and kept adding flour all along until I got it thick enough. This snack was just kind of "winged" as they say. It was really good though. So sweet and crunchy!

I am still just about 13/14 pounds down. I haven't been quite as raw as I would have liked to. I am hoping to kick my rawness up a notch or two in September when my finances improve a little bit.

That's it for now. I just don't feel well today. Thanks for reading!

Blessings,
Kimberly ♥

Day Twenty Nine of My Health Journey, a Natural Slurpy and More Soup

Hello everyone. Today had been a better day. It's been a lazy one. I haven't really done much today. I keep thinking about having to return to school next month. I am kind of dreading that. There is a mix-up in ordering my books that I am trying to get straightened out, and may have to change classes, as well. I am kind of sad about that, because I have been taking very demanding core classes and now am down to electives, so I tried to pick the easiest this semester. I hope I can get it arranged to get the books for those classes.

Last night we ate late... really late. It would have been an early breakfast for some people. There was an accident in the family and my husband wasn't able to come home until 3:30 am. He had a chicken salad sandwich, which we split and then we were still hungry so we made wraps, made of chicken, fried onions, green and red peppers and mozzarella cheese.

Photobucket

I forgot to mention that before he came home I had a baked potato.

This morning we had green tea and a Martin's potato roll each, which we had left over. I added elder berries and wild cherry tea bark to my tea. They are good for asthma, especially the elder berries. They are an expectorant.

Here are the types of tea we used.

Photobucket

Photobucket

Photobucket

I love this brand of tea. I get it at a Chinese store here. The ginger tea was the same way. They don't have to steep. They are just in little pellets, which melt.

Photobucket

The elder berry tea and wild cherry bark tea come loose and have to be steeped in a diffuser cup.

Photobucket

The diffuser cup has holes in it and just lifts out of the regular cup.

Photobucket

Photobucket

I love these little cups. They even have a lid to keep them warm. I have a small collection of three of them. I normally don't care for oriental decor, but love these little cups!

Photobucket

In the afternoon I decided I wanted a smoothie. I peeled an orange. (then chopped it up into pieces and put it in the blender, which I forgot to show.)

Photobucket

Then I juiced three apples, and got 1 1/3 cups of juice, which I added to the orange in the blender.

Photobucket

I put about 2 trays of ice in the blender and whirred it all together, and came up with a nice healthy all natural slurpy. It actually made us two cups each.

Photobucket

Photobucket

After that my husband made us a nice stuffed pepper. It contains melted mozzarella cheese, cilantro, chopped red and green peppers, chopped green onions, cayenne pepper, a pat of butter and olive oil.

Photobucket

Then for supper he made another delicious soup. He called this one Green Beef Soup since most of the ingredients were green. Here are the ingredients. I love this chicken stock! It wasn't very expensive and it contains no MSG!

Photobucket

Here is how that turned out.

In the pot...

Photobucket

and in my bowl...

Photobucket

We are big soup eaters.

We had the soup accompanied with a salad...

Photobucket

and a piece of toasted French bread.

Photobucket

We are talking about going on a water fast soon. I don't know whether we will be able to do it or not. I wanted to go 100% raw, and didn't make it that far, so I kind of doubt that we will be able to do an extended water fast, but we will see. It's just that this diet that we are on is not relieving us from our ailments, which I mentioned when I started this health journey. Also one reason that we are considering a water fast is because money is getting tight for us and about this time of month we have to resort to eating more of a regular diet, which I don't want to do. I am sure that you have noticed that my postings seem to be getting less and less raw.

Well, that's it for today. Thanks for reading.

Love,
Kimberly ♥

Day Twenty Eight of My Health Journey and a Beautiful Photo

Well, this will actually be a pretty short post, down to the details. This has been a pretty bad day.

Fri-day evening before the Sabbath we had beef wraps. They had only beef, cilantro and sauce.

Photobucket

The meat was lean and my husband (who made them) cut all the fat off around the edges. After that we had some cantaloupe.

Satur-day morning, I made a quick smoothie from bananas, pineapple and orange and some kale.

Photobucket

Satur-day night we had chicken stir fry on yellow rice.

Photobucket

This is the rice we use, though I know that brown rice would be healthier. My husband does most of the shopping (except when we go together to the produce store) and he isn't accustomed to buying brown rice yet.

Photobucket

Today my husband woke up and left before I woke up. Being alone, I did not juice or make a smoothie. I have just had a couple of rolls and a little leftover soup. I like the Martin's Potato Rolls just because they ask God to bless their customers on every package.

Photobucket

Tonight, I believe we are going to have more of the stir fry on rice.

And here is a pretty photo that I promised. It was taken from a location on the island.

Day Twenty Six of My Health Journey, Soup Recipe and Adopted "Pet"

Wow, I have got a LONG post for you! I have not posted anything in the past two days! It's because I have been cleaning and organizing my kitchen. I will post pictures of that next week, probably. It always feels good to have an organized kitchen!

As far as what we have been eating, here it is, if I can remember correctly.

Tues-day night we ate some more of the cruciferous salad, which I had made and a fruit salad for supper.

Photobucket

Photobucket

And later that night we ate wasabi peas. I love this as a snack! Here is a Wikipedia link that tells what they are if you have never heard of them. They are hot, but they are oh so good!

Photobucket

Wednes-day we started our day with juice. Here's all the goodies that I put in the juice.

Photobucket

Photobucket

This yielded this much (2 cups) green juice. I didn't photograph the complete juice.

Photobucket

In all my kitchen cleaning we made sandwiches....

chicken sandwiches...

Photobucket

and pastrami sandwiches...

Photobucket

Thurs-day morning we had a smoothie. It contained a banana, two handfuls of chopped pineapple, and a whole bunch of kale.

Photobucket

Here's the finished product.

Photobucket

Photobucket

We also had more sandwiches.

Photobucket

Regarding the sandwiches, we don't use lettuce on our sandwiches most of the time. We usually use spinach, but this time since we had kale, we used it. The darker the green the healthier it is! We use Sargento cheese because they use non-animal rennets, not that I have anything against consuming animals - I sure do it! But, the problem I have with cheese is that most enzymes are from pork, which I do not eat.

For supper last night my husband made a delicious soup! I am sorry that I did not take detailed photos, as I do when I cook, but the kitchen is REALLY small, and two is definitely too many in it! However, the recipe is:

Joel's Davy Crockett Soup ©

1/2 of a small calabasa pumpkin chopped
1 potato (Idaho) chopped
2 cloves of garlic
2 teaspoons olive oil
1 teaspoon butter
1/4 onion chopped
3 leaves of kale chopped
1/2 stick of celery chopped
1/2 carrot chopped
2 cans of chicken broth (or homemade)
2 teaspoons of Parmesan cheese
3 drops of Tabasco sauce

Had we have had it, he would also have added:

1 pinch of black pepper
a handful of chopped cilantro

Saute the garlic in the olive oil, then throw in the assorted vegetables. Add a pinch or two of sea salt. Add 2 cans of chicken broth (homemade is better). Let it simmer until it starts boiling. Add 2 teaspoons of Parmesan cheese and 1/2 cup of heavy cream and let simmer 20 minutes or until the potatoes are tender. Before serving add three drops of Tabasco sauce and serve.

Here's a photo of it. He's a mighty good cook! In fact, when I am in school, he does a great deal of cooking!

Photobucket

We finished the night with a pear each. This is two pears all chopped up with the seeds. Pear seeds are healthy and easy to digest.

Photobucket

This morning we had more juice. Here's the ingredients.

Photobucket

And here's the juice.

Photobucket

As far as my weight loss, the sandwiches added three pounds back, but I am sure it's probably fluids.

I also wanted to share with you our other little pet. We have four guinea pigs and a hamster, and we have kind of adopted this one, as well - until we can catch him in a humane manner and put him out.

Photobucket

Photobucket

You can barely see him walking on the edge of Simcha's cage here.

Photobucket

He stays behind our window curtain in the bedroom and eats with Simcha, the hamster. I have to clean around the window alot, but as long as he stays out of my kitchen and Simcha doesn't mind the company, then I am OK with him.

Love,
Kimberly ♥
