Peel and eggplant and slice it fairly thin into strips.
Lay it in a flat dish and pour the marinade over it, which is made of 1/4 cup of soy sauce, 1 tsp. of hickory flavored liquid smoke, 2 tbsp. of olive oil, 2 tbsp. of honey 1 tsp. of red wine and 1/4 tsp. of black ground pepper.
Let them marinade about 3 or 4 hours, turning them every once in a while to make sure they all get marinaded with the flavor good.
Lay them on your dehydrator trays and let them dry for about 12 or 13 hours (some may take a little longer).
When they are done they should look like this, and they taste great!
